Recipe: Spanish Style Drinking

As part of my ongoing summer cooking series, here are a few summer drinks to enjoy with your friends! These are Spanish inspired drinks that go great with Tapas, and fresh seafood.

Peach Sangria Blanco

Prep: 20 Minutes
Set Time: 8 – 24 Hours

Ingredients
2 bottles dry white wine, such as Sauvignon Blanc

1/2 cup Amontillado or Palo Cortado Spanish sherry

1/2 cup Cointreau
1/4 cup Ultra Fine Baker’s Sugar
1/2 bunch seedless white grapes cut in half
1 lemon, unpeeled and sliced
2 peaches, unpeeled, pitted, and sliced
1 cup black cherries, pitted and halved
1/2 liter club soda

Combine wine, sherry, cointreau, and baker’s sugar in a large pitcher, stirring until sugar is completely dissolved. Add fruits and place in the refrigerator to sit for 8 to 24 hours. Just prior to serving, add club soda to pitcher and gently stir.

Serves about 10 people

Rosso Vermouth with Fresh Fruit

Prep: 5 Minutes

Ingredients

1 bottle Vermouth
1 Apple Chopped
2 Plums Chopped
1/2 Lemon Chopped

Mix the chopped fruit together and place a 1/2 cup of the mixture in each serving glass. Add 2 ice cubes and pour Vermouth over fruit. Serve with Tapas, or just enjoy alone.

Makes 4-5 Servings
